Krista Varady

Krista A. Varady is a Canadian-American scientist known for her studies of intermittent fasting on chronic disease risk in human subjects.[1][2][3][4][5][6][7][8] Varady was one of the first scientists to study intermittent fasting in humans.[4] She is currently a professor of nutrition at the University of Illinois Chicago (UIC) in the department of Kinesiology and Nutrition.[9] She also serves as the director of the Human Nutrition Research Center at UIC.[9] Her work is primarily funded by the National Institutes of Health.[10] She is also the author of a book about intermittent fasting for the general public, titled The Every Other Day Diet.[11]

Krista Varady, PhD

Education

Varady completed her Bachelor's degree in dietetics at the University of Guelph.[9] She then attended McGill University, where she completed her PhD in human nutrition. Her PhD dissertation examined the effects of plant sterols combined with exercise on cholesterol metabolism.[12] After her PhD, she joined the laboratory of Mark Hellerstein at the University of California, Berkeley, to study the health benefits of intermittent fasting.[9] While at Berkeley, she published several pioneering animal studies in this area,[13][14][15] and the first literature review of intermittent fasting.[16]

Studies of alternate day fasting

Varady has published numerous seminal articles examining how alternate day fasting impacts human health. In 2017, her lab published the first long-term (12-month) human trial of fasting.[17] This study showed that alternate day fasting is just as effective as traditional dieting, i.e daily calorie restriction, for weight loss and weight maintenance.[17] Her lab has also published several key studies demonstrating that intermittent fasting is a safe diet therapy [18] that can be used to lower cholesterol levels, blood pressure, and improve glycemic control in individuals with obesity and pre-diabetes.[19][20][21][22][23] Furthermore, she has shown that alternate day fasting can be safely combined with exercise to improve body composition.[21]

Studies of time restricted eating

In 2018, she began studying the health effects of time restricted eating. Her trials have demonstrated that eating within 4-hour,[24] 6-hour,[24] or 8-hour[25] window each day is safe [26] and effective for lowering body weight, reducing blood pressure, insulin resistance, and oxidative stress in adults with obesity. Varady's lab was the first to show that time restricted eating results in energy restriction (by about 300-600 calories per day), without calorie counting.[24][25] She has also published several notable review articles [27][28][29][30] summarizing the emerging benefits of time restricted eating.

Honors

In 2017 she received the Mead Johnson Young Investigator Award from the American Society for Nutrition for her work in intermittent fasting.[31][32]
